Raw, Plant Based, Cookie Dough Bites

I know you've had times when you've told yourself "I have nothing to eat!" knowing damn well you have tons of dry goods you can make healthy, delicious AND filling snacks out of.


I'm starting to get more creative with using the last of the random things in my cupboard.

 

This time I made cookie dough bites.


Gluten, refined sugar, dairy, chemical preservatives, pesticides, can ALL cause inflammation in the body. Not to mention these things also add stress on the liver.

These cookie dough bites are:

  • Gluten Free

  • Dairy Free

  • Low Glycemic

  • Raw

  • Plant Based

  • Nut Free

  • Organic

  • Anti-inflammatory

What you'll need:

1C. Coconut flour

1/3C. Coconut oil (melted)

1/3C. Coconut sugar.

1/3C. Dark chocolate chips.

1/2tsp. Vanilla extract

1/4tsp. Himalayan salt.

Oat milk.


Directions:

~Mix everything in a bowl EXCEPT the oat milk.

~Add a splash or 2 of oat milk just enough so the dough isn't dry.

~Roll the batter into small bite size balls.

~Lay out on tray and stick them in the freezer.


Super easy right?

And SO good!

You can definitely sweeten with honey or maple syrup as well, just remember when adding liquid low glycemic sweeteners it will effect the consistency of the dough, so you may not need as much oat milk.
